The ability to determine the authenticity of foods can prevent mislabelling, substitution of cheaper ingredients, and adulteration, all of which are risks in the supply chain. All of the meat-based authenticity tests are qualitative tests (presence/absence) to determine whether adulteration/contamination of any other species has occurred.
