Description
Aflatoxins are a naturally occurring Mycotoxin produced by two types of mold: Aspergillus flavus and Aspergillus parasiticus. At least 13 different types of aflatoxin are produced in nature although only aflatoxins B1, B2, G1 and G2 are normally found in foods. Aflatoxin B1 is considered as the most toxic and most prevalent. Peanuts, tree nuts, corn, and other small grains are susceptible to aflatoxin contamination. Since aflatoxins are known to be genotoxic and carcinogenic exposure through food should be kept as low as possible. FDA has established action level for total aflatoxins at 20 ppb for all foods, including animal feeds. Canada specifies a tolerance of 15 ppb total aflatoxins in nut and nut products.
