Under the US Food Allergen Labeling and Consumer Protection Act, crustacean shellfish are among the eight foods or food groups designated as "major food allergens" by congress. Allergies to crustaceans are primarily against the muscle protein, tropomyosin, in raw and cooked food. Crustacean allergies often persist throughout adult life, making BioFront's MonoTrace Crustacean ELISA kit a critical food safety diagnostic tool for the protection of crustacean shellfish-sensitive individuals.

The MonoTrace Crustacean ELISA incorporates the use of a precisely defined set of handpicked monoclonal antibodies selected after a rigorous screening process for their ability to:

  • Target a highly stable Crustacean allergen resistant to food processing effects
  • Recognize a carefully selected target protein to eliminate cross-reactivity and reduce the possibility of 'false positive' results
  • Perform well in a wide variety of food products with negligible food matrix interference

REACTIVITY

Reacts equally to raw and cooked tropomyosin from crustacean shellfish, including shrimp, crab, lobster, prawn, and crayfish.

CROSS-REACTIVITY

The assay exhibits strong reactivity to crustaceans and to a significantly lesser extent showed cross-reactivity to octopus (0.0205%). Mussels (0.0013%) demonstrated minimal cross-reactivity when tested with the MonoTrace Crustacean ELISA. At concentrations as high as 100,000 ppm, there was no cross-reactivity to tree nuts, legumes, vegetables, seeds, flours or meats. Reactivity towards raw and cooked shrimp, prawn, lobster, crayfish and crab was similar.

RECOVERY

The MonoTrace Crustacean ELISA kit is suitable for the qualitative or quantitative detection of crustaceans in wine, soup mix, fish batter mix, sauces, tomato juice, imitation crab and sesame oil. Recoveries were acceptable, according to current AOAC guidelines (J. AOAC Int. 2012). In addition, crustacean was efficiently recovered from shrimp-incurred fish ball samples that were cooked under varying conditions. Commercial samples were evaluated with the MonoTrace Crustacean ELISA. All commercial samples labeled as containing shrimp and/or crab were detected. Lobster was not detected in lobster stock but was detected in lobster bisque. In conclusion, raw and cooked nrustacean allergenic protein was efficiently extracted and detected from uncooked and cooked food matrices using the Crustacean ELISA kit.
